On my old blog, I used to do some Friday Fav shout outs and thought I'd do the same on this blog. So...here we go!

My Favorite Tomato Soup Recipe

It's crazy but the weather in Minnesota fluctuates like crazy this time of year. So while winter is gone, "soup weather" is still sticking around.

This recipe is so easy.

NOTE: I have omitted the heavy cream, reduced the butter by half, and I use red wine instead of Sherry.

  • 3 Tablespoons Melted Butter

  • 1 whole Medium Onion, Diced

  • 1 bottle (46 Oz.) Tomato Juice

  • 2 cans (14 Oz. Cans) Diced Tomatoes

  • 1 Tablespoon (up To 3 Tablespoons) Chicken Base

  • 3 Tablespoons (up To 6 Tablespoons) Sugar

  • 1 pinch Salt

  • Black Pepper To Taste

  • 1 cup red wine

  • Chopped Fresh Parsley

  • Chopped Fresh Basil

Directions:

Melt the butter and add the diced onions. Sauté until soft. Add the tomato juice (I use Red Gold), diced tomatoes, chicken base, sugar, S&P and wine. Let it come to a boil. Pull from heat add a pinch parsley and basil.

EASY. PEASY.

I know. These two songs are basically polar opposites of one another. But I love them so.

Ben Rector is one of my favs and he's that guy who when people hear him they say, "Who is this?" and I gladly pull up my Ben Rector folder on my iPhone.

*Fun Fact* I downloaded this album while in the backseat of a Chevy Tahoe on the way to Montana last summer. So when I hear these songs, I can still see the mountains and wide open prairie of South Dakota, Wyoming and Montana whiz by the window.
